2 pounds boneless chicken breast
1 clove garlic (chopped)
1 onion (chopped)
1 green pepper (chopped)
1 medium can of crushed tomatoes
1 can sliced mushrooms (drained)
3 fresh sprigs of rosemary
3 tablespoons olive oil
1/4 cup red cooking wine
1/4 cup water

cooked white rice

Directions:
Directions:
In large skillet, cook garlic and chicken in olive oil. Add onion and green peppers. Add tomatoes, water, red wine and rosemary. Let simmer for 1 hour then add mushrooms. Cook for another 15-30 minutes and serve over cooked rice.
