crust for 9" pie, unbaked
4 eggs, slightly beaten
2/3 c. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
2 2/3 c. milk, scalded
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 450.

In large mixing bowl, beat eggs slightly with electric hand mixer. Add sugar, salt, nutmeg and vanilla. Gradually stir in scalded milk. Pour into 9 inch pastry lined pie pan. Bake at 450 for 15 minutes. Reduce to 350 and bake another 15 - 20 minutes. Bake until a knife inserted into center of filling, comes out clean. Cool on rack, then chill.
