Zucchini and Orzo Salad with Basil Recipe

4 med zucchini, very coarsely grated
1 T salt 2 c fresh basil
3 med garlic cloves 8 c chicken broth
1 pkg orzo 1/2 c olive oil
1/4 c fresh lemon juice 1 c Greek olives

1. Place zucchini in colander and sprinkle with salt.
Toss lightly. Let drain for 30 minutes, stirring
occasionally. Squeeze dry. Place in large bowl
and fluff with hands.
2. Mix basil and oil in processor, stopping to scrape
down bowl. Add garlic through tube and add to
3. Bring chicken broth to a boil and add orzo. Cook
10-15 minutes and drain. Stir in zucchini mixture
and cool to room temp. Add lemon juice and pepper
Garnish with olives and sprigs of basil.
