"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1 cup of sugar 1/2 cup of Light Karo 1 cup raw peanuts 1/4 stick of butter 1 tsp baking soda
Mix sugar and karo in a pyrex bowl and micowave on high for 3 minutes. Remove and stir in the peanutes and return to microwave for 3 additional minutes. Remove and add vanilla and butter. Cook for 1 minute. Add the baking soda and stir rapidly. Quickly pour into 3 buttered foil pie plates. Let cool and then pop out, break into pieces and store in airtight container. (To clean bowl, simply put in sink and fill with hot water. The candy will dissolve quickly. NOTE: Contents become very hot. Be careful!
Microwave time may vary by oven. You may have to adjust. Trial and error works best for me as I have had numerous microwaves!
