4 c. water
1 c. corn meal
1 tsp. salt
2 T. butter

Directions:
Directions:
In a large pot gradually add corn meal to boiling salted water, stirring constantly until thickened. Simmer for 25 minutes, stirring frequently. Blend in butter. Let cool in two loaf pans and chill in refrigerator until ready to use. Slice thinly and pan-fry in well greased (or buttered) skillet until desired crispness. Serve warm with melted butter and maple syrup.

Microwave version: Place all ingredients in large
deep casserole dish. Mix well. Cover and microwave on high for 9 to 10 min. Stir until well blended and microwave for an additional 2 or 3 minutes for thicker corn meal. Let cool in loaf pans.
