2 or 3 pounds cooked & peeled sweet potatoes
2 eggs
Large marshmallows
Cornflakes cereal – finely crushed
1 cup packed brown sugar
1 cup light cream
1 tsp flour
½ tsp vanilla
Directions:
Directions:
Mash potatoes and add eggs. Form ball around marshmallows and roll in cornflakes, place in baking dish – do not crowd. Bake 10 or 15 minutes in 350 oven until they pop open. Mix remaining ingredients and bring to boil and pour around balls and serve.
