3 cups raw chopped apples
1 ½ cups all veg. oil
2 cups sugar
3 eggs
2 ½ cups sifted flour
1 tsp. soda
2 tsp. baking powder
1 tsp vanilla
1 cup chopped nuts
1 tsp. salt

Directions:
Directions:
Peel apples and chop. Set aside. Pour oil in large mixing bowl, add sugar and eggs and beat well. Sift flour with salt, soda, and baking powder. Gradually add flour to creamed mixture. Add vanilla. Gently fold in chopped apples and nuts. Grease tube or sheep pan. Pour in batter. Bake at 350 for 1 hour or until done.

Brown Sugar Glaze for Apple Cake

1 stick margarine
1 cup brown sugar
1 tsp vanilla
1/3 cup milk
Melt together and pour on cake.

As the boys were growing up, we had a family tradition of going apple picking in the North Carolina mountains each fall. We'd bring home a bushel of apples and this was one of the treats I made. Grownups love it more than little kids : )
