2 T. oil
2 lbs. boneless beef in 1 inch chunks
2 med. onions, coarsely chopped
4 med. sweet potatoes, cut in chunks
3/4 c. vinegar
2 c. water
2 bay leaves
1/2 c. brown sugar
5 c. red cabbage, shredded
5 gingersnap cookies, crushed into crumbs
1/3 c. dark raisins

Directions:
Directions:
In a large kettle, brown meat in oil, then remove. Add onions and cook until tender. Transfer meat back to the kettle, then and add potatoes, vinegar, water, sugar, bay leaves. Simmer l hour. Add red cabbage, cookie crumbs and raisins. Simmer covered 25 minutes. Remove bay leaves.

Remove meat from pan and slice into thin pieces. Arrange in center of serving platter, then surround with sweet potatoes and red cabbage. Moisten with pan juices.
