7 lbs. leg of lamb
8 garlic cloves
1 tsp. oregano
2 tsp. salt
1 tsp. pepper
2 onions, sliced
1 c. boiling water
6 T. lemon juice
2 c. orzo (rice shaped pasta)
1 c. tomato puree
1 c. Parmesan cheese, freshly grated

Preheat oven to 450º.

Make 8 1/4" holes in fat side of lamb and insert garlic cloves. Combine 1 tsp. salt and pepper and smear on lamb. Transfer to baking pan and roast for 20 minutes. Reduce oven to 350º. Baste with 1 T. lemon juice. Add onion slices on bottom of pan. Roast 15 more minutes. Baste again with 1 T. lemon juice. Pour 1 cup boiling water over all and continue to baste periodically with lemon and water. Roast 40 - 60 minutes more.

Bring 10 cups salted water to boil. Pour in orzo and cook 10 minutes or until done. Drain. Remove lamb from oven and let it rest for 10-15 minutes. Leaving fat, juices and onion in pan, add tomato puree and stir. Add cooked, drained orzo. Bake uncovered at 350º for 10-15 minutes. Taste for seasoning. Add salt and pepper if needed. Cut lamb in slices and place in center of platter. Surround meat with orzo and serve with Mediterranean themed side dishes.
