1 bolsa de espinaca fresca
60 grs. o 2 onzas de queso roquefort o blue cheese
6 onzas de crema de leche
1 yema
1 onza vinagre blanco
8 tiras de tocino
palmitos en rodajas (opcional)
sal y pimienta

Directions:
Directions:
Lavar las espinacas y cortarlas en tiras. Colocarlas en una ensaladera.

Freir el tocino o cocinarlo en el microhondas en high entre dos papeles absorbentes hasta que quede crispy. Romperlo con la mano y agregarlo a la espinaca. Acomodar encima los palmitos en rodajas.

Aliņo:
En un tazon deshacer bien el queso roquefort con un tenedor y aņdirle la yema. Incorporar poco a poco la crema de leche moviendo bien con el tenedor. Por ultimo agregarle el vinagre. Rectificar la sal y aņadirle un poquito de pimienta molida. Refrigerar.

Al momento de servir, baņarlo con el aliņo.
