1 tbsp. unsalted butter
1 med. onion, finely diced
2 cloves garlic, minced
2 cups ketchup
1/2 cup molasses
1/2 cup apple cider
1/4 cup sugar
3/4 cup lager style beer
1 tbsp. yellow mustard
1 tbsp. worcestershire sauce
1 tbsp. cayenne pepper
1 tbsp. paprika
3 (1 lb. each) NY strip steaks
salt and ground pepper
2 tbsp. vegetable oil

In med saucepan over medium heat, melt butter. Add onion and garlic; saute for 3 minutes until softened. Add the rest of the ingredients; bring to a boil, then simmer until sauce is reduced to 2 cups. About 30 minutes. Preheat grill pan. Season steak with salt and pepper and rub with oil. Grill steak about 3 minutes per side for med/rare. Let rest for 10 minutes and serve with sauce on side.
