8 potatoes; peeled, boiled and diced
1/2 c. chopped onion
3/4 c. mayonnaise
3/4 lb. American cheese, cubed
1/2 c. sliced green olives
1 lb. bacon, cooked and cubed

salt and pepper to taste

Directions:
Preheat oven to 325.

Wash and quarter potatoes. Cook in boiling salted water for 15 - 20 minutes until barely tender with fork test. Meanwhile, cook bacon, drain on paper towel and cube into bite size pieces.

Mix all ingredients together in a well greased 9 x 13 baking dish. Bake for 45 minutes. The green olives and bacon give this potato dish a distinct flavor.
