- 6 - eggs - hard boiled - chilled
- 2 - tbsp - celery - finely minced
- 2 - tsbp - green onion - white part only - finely minced
- 2oz - ham or bacon - minced
- 2 tbsp - mayonnaise
- 1 tsp - Dijon mustard
- salt & pepper to taste
- paprika for garnish

- cut eggs in half lengthwise, remove yokes to a bowl
- place whites on a serving plate
- add rest of ingredients to yokes except paprika
- mix well till smooth
- place in piping bag, with large round top on it
pipe onto egg halves, filling each evenly
- or use a spoon and fill
- garnish with paprika
- keep chilled until served
