4 large baking potatoes
Vegetable oil
2 tbsp butter or margarine
1/4cup finely chopped onion
1/4 cup chopped green pepper
2 tbsp all - purpose flour
1 3/4 cups milk
1 cup (4 oz) shredded Cheddar Cheese
2 tbsp chopped pimiento
1/2 tsp salt
1/2 tsp pepper
4 frankfurters, cut in 1/4 - inch slices
1/2 cup (2 oz) shredded cheddar cheese

Directions:

Wash potatoes, and rub with oil. Bake at 400º for 1 hour or until done.
Melt butter in a medium saucepan; add onion and green pepper, and saute until tender. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in next 5 ingredients; stir until cheese is melted.
Split tops of potatoes lengthwise, and fluff pulp with a fork. Spoon topping over potatoes; top with 1/2 cup cheese.
