2 T. olive oil
1 yellow onion, chopped
2 tsp. chili powder (optional)
1 lb. red peppers, seeded and diced
1 lb. ripe tomatoes, diced
1 c. chicken stock (more if desired)

salt & pepper to taste

Directions:
Directions:
In a large kettle, saute onions in olive oil. Add peppers, tomatoes, chicken stock and boil until tomatoes give up their liquids and peppers are soft. Pass contents of kettle through food mill. Return to kettle and bring to simmer. Add salt, pepper and chili powder, if desired. Garnish with chopped cilantro, sour cream, or Cre'me Fraiche. Can be reheated or frozen.
