1 tsp dried oregano
2 cloves of garlic, minced
pepper to taste
1 tomato thinly sliced
1 small onion thinly sliced
2 tbsp chopped parsley
1/2 cup dry breadcrumbs
1 tbsp vegetable oil
2 portions of salmon

Directions:
Directions:
Spray shallow baking pan with non-stick coating.
Place fish skin down in baking pan & sprinkle with oregano, garlic & pepper. Layer with tomato, onion & parsley. Mix breadcrumbs with oil & sprinkle on top of fillets. Bake at 450 F for 8 to 10 minutes or until fish flakes easily.
