1 Lb. Ground Beef
1/2 C. Chopped Onion
1 T. Flour
8 Oz. Can Tomato Sauce
1/2 C. Chopped Green Pepper
1 Tsp. Italian Seasoning Blend
1 Tsp. Chili Powder
1/2 Tsp. Salt
1 C. Shredded Sharp Cheese
Parmesan Cheese

Directions:
Directions:
Cut Eggplant in 1/2 inch slices. Do Not Peel
Cook beef and onion until done. Drain fat, sprinkle flour over meat and stir. Add tomato sauce and green pepper and salt. Mix well. Salt and pepper eggplant slices.

Alternate meat mixture and cheese over eggplant.

Cover and bake 1 hour at 350. Top with Parmesan Cheese
