4 large baking potatoes
Vegetable Oil
2 (3 oz.) packages cream cheese, softened
1 ripe avocado, peeled and mashed
2 tbsp. milk
1 tbsp lemon juice
1 tbsp grated onion
1/4 tsp. salt
4 slices bacon, cooked and crumbled
2 small tomatoes, cut into wedges

Directions:

Wash potatoes, and rub with oil. Bake at 400º for 1 hour or until done.
Beat cream cheese with electric mixer until smooth. Add Avocado and milk beating until smooth. Stir in lemon juice, onion, and salt.
Split tops of potatoes lengthwise, and fluff pulp with a fork. Spoon avocado topping over potatoes. Sprinkle with crumbled bacon, and top with tomato wedges.
