1 c. brown rice
2 c. water
1 (15 oz.) can black beans, rinsed and drained
2 c. halved cherry tomatoes
2/3 c. diced avocado
1/3 c. chopped green onions
1/3 c. shredded cheddar cheese
1 T. chopped ripe olives
1/4 t. salt
1/4 t. black pepper

Directions:
Combine rice and water in a medium saucepan, bring to a boil. Cover, reduce heat and simmer 35 minutes. Stir in beans and cook 10 minutes or until rice is done. Place mixture in a large bowl and add remaining ingredients. Toss to combine.
