3 Tablespoons butter
1/4 cup flour
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
2 1/2 to 3 cup milk (increase if sauce is too thick)
2 cups cheddar cheese, grated
1 c Monterey jack, grated
1 c mozzarella cheese, grated
1/2 c Parmesan cheese, shredded
1 (16 oz) box elbow macaroni

In large saucepan, melt butter over low heat. Stir in flour, salt, mustard and pepper until smooth. Little by little, stir in milk until smooth. Stir constantly for 10 minutes on heat until thickened. Remove from heat and add cheeses. Stir until cheese is melted and sauce is smooth. Place cooked, drained macaroni in buttered casserole dish. Pour cheese mixture over and mix well. Sprinkle with a little paprika and additional cheddar cheese. Bake at 375 for 20 minutes.

While Nana Emma and Nana Margie made much loved Mac and cheese, they never wrote down their recipes. I've experimented for a couple of years to develop this one. Sammie, Sara, and Shari love it!
