1 medium onion diced
1 tbsp. unsalted butter
12 extra large eggs
1 cup heavy cream or half and half
4 ox. of goat cheese such as Montrachet crumbled
1/2 lb. salmon chopped
3 scallions chopped white and light green parts
3 tbls chopped fresh dill
1/2 tsp. pepper

Directions:
Directions:
Preheat oven 350º.
Saute onion and butter in 10" oven proof pan over medium low heat until translucent about 5 minutes
In large bowl beat eggs and add cream, goat cheese, salmon, scallions, dill and pepper (salt if needed) and combine. Pour mixture over the onions and place the pan in the center of the oven. Bake for about 50 minutes until it puffs and knife inserted in middle comes out clean. Serve hot immediately from the pan.
