"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Directions:
You need to use the smooth side of a waffle iron for this recipe. Heat the waffle iron. While that's taking place, cut the hot hogs into thin strips (length wise). Spread mayonnaise and mustard on the bread, arrange hot dogs on one side, and place the single layer of cheese over the hot dog and cover with other slice of bread. Place into waffle iron and cook until cheese is melted and bread is toasted. Remove sandwich, separate and insert lettuce. Cut diagonally and serve.

Personal Notes:
This sandwich is served at a restaurant in Sacramento named Vic's. This restaurant has been in business since 1946 and was a favorite of my Grand-father Al's and my Dad's. My Grand-father and Dad both have been taking me there since I was a baby. This is my favorite sandwich which is served with plain Lays chips. I would eat that with a mint chip shake.
