4 tbsp. (1/2 stick) unsalted butter plus more for baking

3 cups of elbow macaroni
2 (12 oz) cans evaporated milk
1/3 skim milk
2 large eggs
1/4 tsp. garlic powder
2 (8 oz.) packages extra sharp cheddar grated
1 (8 oz.) package Monterey Jack cheese grated

Preheat oven 375º. Butter or use spray 13 x 9 inch baking dish. Bring large pot of water and salt to a boil. Cook macaroni till al dente. Drain and return to pot. Add butter and toss till butter melted.
In medium bowl whisk evaporated milk, skim milk and eggs. Add salt, pepper, garlic powder. In another bowl combine cheeses.
Layer 1/3 of macaroni on bottom of baking dish, cover evenly with 1/3 of cheese mixture. Repeat with macaroni and cheese mixture. Pour milk mixture evenly over contents of baking dish. Sprinkle with paprika.
Bake 35-45 minutes until top layer is lightly browned. Let stand 10-15 minutes before serving.
