4 Russet Potatoes
4 Slices Bacon (cooked and chopped)
4 Green Onions or Chives (chopped)
1 Small container of Sour Cream
1 c. Shredded Cheddar Cheese
1 t. Salt
1/2 t. Pepper
Paprika

Directions:
Clean and scrub potatoes. Insert fork into each potato and skewer with metal rod. Cook in a pre-heated 450º oven for 1 hour. Remove potato and while still hot cut in half length wise. Be careful not to damage to skins since you will need to refill them with the potato mixture. Scoop the potato into a large mixing bowl and add butter, sour cream, green onions and cooked bacon. Mix well with a mixer. Stuff potato skins and place on cookie sheet. Sprinkle tops with paprika and return to the 450º oven for 15 minutes.
