New York Steak (Thick cut)

Tri-Tip Steak (Whole brisket)

Get the grill hot, sear the steak for 7 minutes, then flip and grill another 7 minutes. Cover with foil for 5 minutes, then serve.

For the Tri-Tip, use the same 7 minutes, then flip and additional 3 minutes on each side. Cover with foil for 5 minutes, slice across the grain.

Season the meat with seasoned salt, salt and pepper on one side only. I prefer to do it when I initially place the meat on the grill. Add one small slice of butter to the steak when you remove the meat prior to covering with the foil. Don't use butter if the meat was marinated. Also cut back on spices or delete all together if meat is marinated.

The steaks will be medium rare for both of these recipes. The meat should be at room temperature, but straight out of the refrigerator will be fine. If the meat is still slightly frozen, the meat will be rare in the center.
