One 2 1/2 lb fryer, cut up
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup flour
1/2 teaspoon baking powder
1 egg, beaten

Directions:
Directions:
Salt and pepper chicken. In a large mixing bowl, pour beaten egg over chicken pieces, and stir to coat. Sprinkle flour over chicken, then baking powder. Mix all together until chicken is coated heavily. Fry in deep fat at 350º, browning well on both sides.

We all know Fannie Smith as Gamms. Nana Emma also prepared her chicken this way. Years ago, the women of the family fried several chickens and served them with mashed potatoes, gravy made from the drippings, and fresh garden vegetables like sweet corn, okra and tomatoes. The family gatherings were often 25-30 "cousins."
