1 1/2 c. grapefruit sections, cut into pieces with juice reserved (approximately 2 grapefruit)
1 c. sugar
1 envelope unflavored gelatin
1/4 c. cold water
1 c. heavy cream
2 tbsp. powdered sugar
1/2 tsp. vanilla
1 (9 in.) graham cracker pie shell

Directions:
Combine fruit, juice and sugar. Let stand 5 minutes. Drain fruit and measure 1 c. of juice. Bring juice to a boil. Sprinkle gelatin over cold water to soften; add to hot juice and stir until dissolved. Chill until mixture is slightly thicker than consistency of unbeaten egg white. Beat cream with powdered sugar and vanilla until stiff. Fold whipped cream and fruit into gelatin mixture. Turn into pie shell and chill.
