3 tablespoons cornstarch
1 cup sugar
1 cup boiling water
4 egg yolks
2 tablespoons butter
4 tablespoons lemon juice
Pinch of salt
3 egg whites
2 1/2 tablespoons sugar

Directions:
Directions:
Combine cornstarch and cup of sugar. Add water slowly, stirring constantly until thick and smooth. Add slightly - beaten egg yolks, butter, juice and salt. Cook 2 to 3 minutes. Pour into a baked pie shell. Cover with meringue made from 3 egg whites beaten stiff and 2 1/2 tablespoons of sugar. Bake at 400 untilgolden brown.
