1 lb. cubed prosciutto
1 lb cubed salami
1/2 lb cubed pepperoni
1/2 lb cubed (or shredded mozzarella)
8 eggs
1 1/2 lb ricotta cheese
1 lb basket cheese
couple of handfuls of grated cheese (Parmesan or Romano)
Crust: 4 pie shells. Buy pie crust or make your favorite

Cube all salami & cheeses. Cream ricotta, eggs, grated cheese – and mix well. Stir into cubed meat/cheese. Place bottom crust in pie dish. Fill dish with meat/cheeses mixture. Put on top crust. Beat some egg yolks and brush lightly over top crust. Bake at 300 degrees for 1 ½ hours. Remove from oven when cooked & drain upside down on brown paper bag.
