1/2 cup butter (real butter, no margarine)
Approximately 1/2 cup mizithra cheese
Spaghetti

Grate the cheese (the finer, the better) and refrigerate it. Cook the spaghetti according to package directions. Chop the butter into 1/2" slices, and cook on MEDIUM heat, stirring frequently. It will eventually foam up and a grainy substance will form at the bottom. As soon as this happens, slowly pour the butter into a container, leaving the grainy stuff settled in the pan (you don't want the grainy stuff!). Sprinkle a generous amount of the grated mizithra cheese on the cooked spaghetti, and pour the butter over the top. Stir, and enjoy.

This is a simple dish that's easy to make. It's really just spaghetti and butter with a unique kind of cheese. The cooking of the butter is crucial to the overall taste. The mizithra can vary, depending on the brand you get or even the batch of the brand. I've found you may need to add some salt, depending on the varying salt content of the cheese you buy.
