Salad:
1 red bell pepper
1 yellow or orange pepper
romaine or leaf lettuce

Dressing:
1/2 c. honey or maple syrup
1/2 c. orange juice concentrate
1/2 c. balsamic vinegar
1/2 c. sunflower oil
1/2 c. olive oil
grated rind of one orange
snipped chives

Directions:
Directions:
Mix salad dressing ingredients together and chill 4 to 24 hours. [makes 2 cups]
Cut peppers into thin rings and remove seeds.
Cook in small amount of water in fry pan, 1 to 2 minutes. Chill.
Hand tear lettuce. Toss in peppers, pour over some of the dressing,* toss well. Serve.

* you will only need about 1/2 or less of the dressing, depending on the amount of lettuce.
