2 cups yellow cornmeal
l/2 cup all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 1/2 teaspoons salt
1/4 teaspoon cayenne pepper
1 egg, beaten
1 1/3 cups buttermilk
4 green onions, including tops, minced
3 tablespoons chopped fresh parsley
Peanut oil for deep frying

Directions:

In a mixing bowl, stir together the cornmeal, flour, baking soda, baking powder, salt, and cayenne. In another bowl, beat the egg and add the butter, green onions, and parsley, mixing well. Stir the wet ingredients into the dry ingredients and mix wet. In a deep-fryer or deep, heavy pot, pour in oil to a depth of 3 inches, Heat to 375 degrees. Working in batches, carefully drop the batter, either by rounded spoonfuls or formed into 3-inch long "pones" into the hot oil. Fry, turning with a slotted spoon, until crisp and golden, about 5 minutes. Using the slotted spoon, retrieve the fritters and drain on a rack or paper towels. Serve hot with fried catfish or chicken.
