8 dried black shiitake mushrooms
3/4 lb ground lean pork
4 green onions(including tops finely chopped)
1 1/4 c finely shredded Chinese (napa) Cabbage
1 tbsp each soy sauce, dry sherry, and cornstarch
1 tbsp sesame oil
1 tbsp minced fresh ginger
1/2 tsp sugar

Won Ton Wrappers

For Frying the pot stickers;
2 tbsp vegetable oil
2/3 c chicken broth

Dipping Sauce:
Soy sauce, Rice Vinegar, Chili Oil to taste

Soak mushrooms in enough warm water to cover for 30 minutes; drain. Cut off and discard stems; finely chop caps. Combine mushrooms with remaining filling ingredients in a medium size bowl; mix well.

To shape each pot sticker place 1 heaping tbsp of filling in center of each won ton wrapper. Lightly moisten edges of won ton wrapper with water. Fold over and make crescent shaped dumplings folding the top with pleats to seal securely. Set pot sticker down firmly on a cookie sheet covered with wax paper. Cover filled pot stickers with a damp paper towel while shaping the others so they wont dry out.

Cooking:
Place a wide frying pan with a non stick finish over a medium high heat until hot. Add 1 tbsp of oil swirling to coat sides. Set half the pot stickers seam side up, without crowding, in frying pan. Cook for 2 to 3 minutes or until bottoms are golden brown. Then lay on each side to insure that they are golden on all sides. Drain excess oil and reduce heat to medium low. Pour in 1/3 c chicken broth, cover and cook until liquid has evaporated, swirling pan occasionally. Transfer pot stickers to a serving platter and keep warn in a 200º oven. Cook remaining pot stickers with remaining oil and broth.
