1/4 c. butter, melted (no substitutes)
1 egg
3/4 c. honey
3/4 c. unsweetened applesauce
1/4 tsp. almond extract
2 c. whole wheat pastry flour (available at health food or whole foods store)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. powdered cloves
1/4 tsp. salt
3/4 c. chopped walnuts, optional

In medium bowl, mix butter, egg, honey, applesauce and almond extract with a whisk. Sift together flour, baking powder, baking soda, salt and spices into small bowl. Add walnuts and stir dry ingredients to distribute evenly. Add dry ingredients to wet ingredients and mix together with whisk just until combined. Spoon batter into greased 12-cup muffin tin filling cups almost full. Bake at 350 degrees for 25 minutes. To make mini muffins, cut baking time to 15 minutes.

I love to make these muffins for the kids' breakfast. They use healthy whole wheat flour, are low in fat and honey is the only sweetener. They are best when hot out of the oven so I usually make half a batch using 1/8 cup egg substitute and one 3.9 oz. cup of applesauce. This makes 12 mini muffins which Brendan, Emmy and I can just about devour in one sitting.
