1 hen (fryer will do)
salt and pepper to tast
l large onion
4 c. flour
1/2 tsp. salt
1 tsp. baking powder
3 T. crisco
2 egg yolk
water

Directions:
Directions:
Salt and pepper the chicken. Place in a large pot with the onion and cover with water ( a stick of celery adds flavor to the broth also). After bringing to a hard boil, cover and reduce heat to low. Cook until chicken is tender. After the chicken is done, remove the chicken from the broth to cool a bit so you can remove it from the bones easily. In the meantime. combine the flour, salt, and baking powder. Cut in the shortening with a fork. Add beaten egg yolk to the mixture. Add enough water to hold the dough together. Roll out the dough on heavily floured surface until very thin. Cut into strips about 11/2 in. wide and 3 in. long. Not necessary to be precise the the size. Remove the bone from the chicken. Return the broth to the heat. When it begins to boil, add the strips of dumplings one piece at a time or they will stick together. Add dumplings until you have used all the dumplings. If you need more broth, just add a little more water and a chicken boullion or two or some canned chicken broth. Add the chicken on top of the dumplings and cook until dumplings are tender--probably 20-30 minutes.
