5 cups all purpose flour
1 tsp baking soda
2 tsp baking powder
2 ½ cups sugar
Pinch of salt
3 eggs, slightly beaten
½ cup buttermilk
2 sticks butter, softened
1/2 cup shortening, room temperature
3 tsp vanilla extract
1 tsp allspice
1/2 tsp nutmeg
½ tsp lemon extract

Directions:
1. Preheat oven to 350 degrees.
2. Grease baking sheet lightly.
3. Cream butter, shortening and sugar.
4. Add slightly beaten eggs one at a time.
5. Add vanilla, lemon, salt, nutmeg and allspice.
6. Mix baking soda and buttermilk.
7. Sift flour and baking powder together.
8. Add flour and buttermilk alternatively in 2-3 portions.
9. Knead dough on floured surface. Dough should be soft, but not sticky. Do not add too much flour in kneading or teacakes will be hard.
10. Roll out dough to 1/4 inch thick. Not any thinner or teacakes will be hard.
11. Using a cookie cutter, cut dough into desired shapes. I use a recycled vegetable can.
12. Bake for 10-12 minutes or until they are golden brown on the edges.
13. Remove to cooling rack. Store in airtight container when cooled.

Personal Notes:
1. To make rolling easier and add taste to your teacakes, mix 1/2 cup sugar with 1 teaspoon nutmeg and sprinkle on board/surface before rolling.

2. Sprinkle sugar/nutmeg mixture on teacakes before baking.
