2 1/2 cups milk
3 eggs separated
1 cup sugar
1 tbsp. butter
1 tsp. vanilla
Nutmeg

Directions:
Directions:
Scald Milk. Beat yolks with sugar. Add milk and fold in beaten egg whites. Add vanilla and butter; then pour in custard cups. Sprinkle nutmeg on top before baking. Bake in a pan of water in 300 oven for 1 hour.

Variation: Carmelize 1/2 cup white sugar in heavy iron skillet until a rich golden brown. Pour a small amount in each custard cup before adding custard mixture. You may also use coffee for an interesting variation
