½ cup rice
1 quart milk
½ cup sugar
½ tsp salt
1 tsp grated lemon rind
¼ tsp nutmeg
½ cup seedless raisins

Directions:
Directions:
Preheat oven to 300 degrees. Combine rice, milk, sugar and salt; pour into butter 1 ½ quart baking dish. Bake in 300 oven for 1 hour; sir occasionally. Add lemon peel, nutmeg, and raisins; continue baking 1 ½ to 1 ¾ hours. (2/3 cup brown sugar may be used in place of granulated sugar.)
