1 - 1/4 cups sifted Swans Down Cake Flour
1/2 cup sugar
1 - 1/2 cups (about 12 egg whites) at room temperatures
1 - 1/2 tsp. cream of tartar
1/4 tsp. salt
1 tsp. vanilla
1/4 tsp. almond extract
1 - 1/3 cups sugar

Directions:

Measure sifted flour, add 1/2 cup sugar and sift 4 times. Combine egg whites, cream of tartar, salt and flavorings in large bowl. Beat at high speed with mixer until soft peaks form. Sprinkle in rest of sugar in 4 additions,beating until blended after each addition. Sift in flour mixture in 4 additions folding in with large spoon, turn bowl often. Pour in ungreased 10" tube pan. Bake at 375 degrees for 35 to 40 minutes. Cool cake upside down in pan on cake rack. Loosen sides and remove from pan when cool.
