1 lb. ground beef
1/2 c. onions, chopped
1/2 c. green peppers, chopped
1 c. mushroom soup
1/3 c. milk
1 c. tomato juice
8 flour tortillas
2 1/2 c. shredded cheese

Directions:
Directions:
In a large skillet brown the meat, onion and green pepper. Drain off the excess fat. Add soup, milk and juice. Heat thoroughly. Warm the tortillas and add 1/4 cup cheese in each. Place the rolled tortillas in the sauce on the frying pan. Cover with the rest of the cheese. Cover and heat slowly until the enchiladas are warmed through. Green chilies may be added to this dish. Chicken may be substituted for beef.
