1 lb. ground beef
3 c. water
1/2 t. salt
1/2 t. cumin
1 1/2 c. rice
1 t. grated lime rind
1 T. fresh lime juice
cheddar cheese
sour cream
chopped tomatoes
chopped green onions

Cook ground beef and drain. In same pan, bring water, salt and cumin to a boil. Add rice, cover, reduce heat and cook 20-25 minutes, until done. Stir in beef, lime rind and lime juice. Serve in baked tortilla bowls and top with desired toppings.
