1 (8 oz.) package light cream cheese, softened
1/2 c. sour cream
4 oz. mozzarella or Monterrey jack cheese, shredded
1 (2oz.) jar diced pimientos, drained
2 T. sliced green onions
2 T. chopped green chilies, drained
2 T. chopped ripe olives, drained
10 (8") flour tortillas, or whole wheat tortillas
Paprika or chili powder
Jalapeņo rings or sliced olives

In small mixer bowl, combine cream cheese and sour cream. Beat at medium speed, until smooth. By hand, stir in cheese, pimientos, green onions, chilies and olives. Spread about 1/3 cup cream cheese mixture over 1 tortilla. Top with another tortilla. Spread with about 1/3 cup mixture. Repeat layering 2 more times ending with tortilla. Wrap in plastic wrap. Repeat with remaining tortillas and cheese mixture. Refrigerate at least 2 hours or overnight. To serve, cut tortillas into 1" squares; sprinkle tops with paprika or chili powder. Garnish with jalapeņo pepper rings or olives.
