2 large ripe bananas, mashed (1 cup +)
2 eggs
1 3/4 c. flour
1 1/2 c. sugar
1 c. chopped walnuts (optional)
1/2 c. vegetable oil
1/4 c. plus 1 tbsp. buttermilk
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp.nutmeg

Topping for Banana Nut Bread
1/4 c. brown sugar
1/4 tsp. cinnamon
1/4 c. chopped nuts

Directions:

Mix topping ingredients together; set aside. In a large mixer bowl combine 1 cup of flour, sugar, baking soda, salt, cinnamon, and nutmeg. Add mashed bananas, oil, buttermilk and vanilla. Beat on low speed till blended, then on high speed for 2 minutes. Add eggs and remaining flour; beat till blended. Stir in nuts.

Pour batter into one large 8 by 4 loaf pan or 3 small loaf pans. Spoon topping on top. Bake in a 350º oven for 1 hour to 1 hour and 10 minutes for large loaf pan and 40 to 45 minutes for small pan or until a toothpick inserted in center comes out clean.
