2 cups flour
2 cups sugar
2 t. baking soda
2 t. baking powder
2 t. cinnamon
1 t. salt
4 eggs, slightly beaten
3 cups grated carrots
1/2 cup Wesson oil

FROSTING:
1- 8oz cream cheese
1/2 cup butter/margarine -room temperature
1 box of powdered sugar, sifted
1/2 cup chopped nuts
2 t. vanilla

Directions:
Directions:
1- Sift together the flour, baking powder, cinnamon and salt. Add sugar and mix well. Set aside.
2- In a large mixing bowl, beat eggs and oil on medium speed.
3-On low speed, add the flour mixture gradually to the eggs.
4- Fold into batter 3 cups of grated carrots. Blend all ingredients.
5- Grease and flour a 13" X 9" X 2" baking pan. Place batter into pan.
6- Bake in a preheated oven 300º F for 45 minutes. When cool, frost with Cream Cheese Frosting
CREAM CHEESE FROSTING:
1- In large mixing bowl, place butter ( room temperature) and cream cheese, beat until fluffy.
2- Add sugar and vanilla and blend well.
3- Frost cake. Top with chopped nuts.
