4 lb lean beef roast, steak
1/3 C brown sugar
5 tbsp non-iodized salt
2 tbsp dry mustard
1 tbsp crushed red pepper flakes
3 tsp ground black pepper (I use less)
2 tsp monosodium glutamate (Accent)
1 tsp garlic powder
2 C water
1/2 C honey Dijon barbecue sauce
1/4 C Worcestershire sauce
1/4 C honey
1/4 C prepared mustard
2 tbsp horseradish
1 tbsp liquid smoke

Directions:
Trim any fat from meat and slice into thin slices.
In large bowl combine the brown sugar, salt, dry mustard, red and black pepper, monosodium glutamate and garlic powder. In another bowl combine water, barbecue and Worcestershire sauces, honey, prepared mustard, horseradish and liquid smoke. Stir sugar mixture into water mixture.
Cover beef with marinade. Can put in large ziplock bag or other covered container. Place in refrigerator for 12 or more hours.
To cure place in single layer in food dehydrator until they feel like leather.
