- 3 - whole chicken breasts - split and pounded
Batter
- 2 - eggs - beaten
- 1 - cup - fine dry bread crumbs
- 1/8 tsp pepper
- 1 tsp - salt
- 1/2 cup - butter

Tomato Sauce
- 2 cups - crushed tomatoes
- 1/8 tsp - garlic powder
- 1/4 tsp - basil
- 1 tbsp - butter
- 1/2 cup - Parmesan cheese
- 8oz - fresh mozzarella cheese - sliced

Directions:

Preheat oven 350º F

- place beaten eggs in shallow baking dish
- place breadcrumbs, salt and pepper in another shallow baking dish
- dip both sides of a the chicken breasts in the eggs, then press firmly in the breadcrumbs, doing one breast at a time, place on a tray or plate
- heat butter in frying pan until melted, warm
- fry breasts until golden on both sides, place in a large baking dish
- meanwhile place tomatoes, basil, garlic powder in a saucepan, bring to a boil, simmer 10 minutes
- pour sauce over chicken breasts, sprinkle with Parmesan cheese
- bake for 30 minutes
- place 1 - 2 slices of mozzarella cheese on each chicken breast, and place back in the oven until melted
- broil for 2 - 3 minutes until slightly browned
- serve with pasta, salad
