1 1/2 c. Wesson oil
2 c. sugar
3 eggs
3 c. cake flour
1 tsp. salt
1 tsp. soda
2 tsp. vanilla
1 1/2 tsp. cinnamon
3 large or 5 small apples, cubed
1 c. chopped pecans

Glaze: 3/4 stick of butter, 1/2 c. light brown sugar, 2 tsp. vanilla

Directions:
Directions:
Combine oil, sugar and eggs and beat on medium speed for 3 minutes. Blend in flour, salt, soda, vanilla and cinnamon. Fold in apples and pecans.

Pour batter into greased and floured tube pan or 2 small loaf pans. Bake at 350 degrees for 1 hour and 15 minutes. While cake is baking, make glaze by combining all ingredients in pot and boil for 2 minutes, stirring frequently and set aside. Let cake cool 20 minutes and then pour glaze over cake.
