1 12 oz bag fresh cranberries
1 cup sugar
1 cup water
2-1/4 tsp finely grated orange peel
1/2 tsp coarse kosher salt

1-1/2 cups 1/3-inch cubes peeled cored fresh pineapple
2 thinly sliced fresh jalapeno chilies

Directions:
In medium saucepan, combine cranberries, sugar, water, orange peel and salt. Add pineapple and jalapeno. Bring to a boil, stirring often. Reduce heat to medium-low and simmer until most of the cranberries burst, stirring occasionally, about 10 minutes. Transfer to serving bowl; cool to room temperature. Cover and store up to 1 week.

Immediately before serving, stir in 1 tablespoon chopped fresh cilantro.

Makes approximately 4 cups.
