Boston, Bib or Romaine lettuce leaves
8 oz. fresh baby green beans
12 oz. tiny new potatoes
1-1/2 c. flaked cooked salmon
2 medium tomatoes, cut into wedges
2 hard-cooked eggs, sliced
1/2 c. pitted ripe olives
1/4 c. thinly sliced green onions

DRESSING:
1/4 c. olive oil
1/4 c. white wine vinegar or white vinegar
1 tsp honey
1 tsp snipped fresh tarragon or 1/4 tsp dried tarragon, crushed
1 tsp Dijon-style mustard
1/4 tsp salt
dash black pepper

Scrub potatoes and cook till just tender. Cook green beans till tender-crisp. Chill.

Prepare Nicoise Dressing: in a screw top jar, combine all dressing ingredients; cover and shake well.

Line 4 salad plates with lettuce leaves. Layer green beans, potatoes, salmon, tomatoes, eggs and olives on the lettuce-lined plate. Sprinkle each serving withgreen onions. Shake the dressing and drizzle over each salad.
