1 c. uncooked white rice
2 boxes Near East Pilaf
3 bunches green onions
1 c. each carrots, green zucchini, yellow squash,
mushrooms, diced
1 pkg. frozen peas
1 pkg. dried red cherries orr craisins
1/2 c. chicken broth
1/4 c. melted butter

Directions:
Directions:
Cook both types of rice according to package directions, mix together and set aside. Saute all chopped vegetables in chicken broth and/or olive oil. Cook peas according to package directions. Toss vegetables together with rice. Add dried craisins. Moisten with melted butter and chicken broth, as needed. Add salt and pepper to taste.

Rice(s) can be made the day before and refrigerated. Vegetables can also be chopped the day before and then assemble all to cook quickly. Can be served hot or cold.
